Lebanon's culinary tradition — shaped by Mediterranean geography, Levantine agricultural heritage, and millennia of trade — has produced a pantry of foods that are not just culturally significant but nutritionally remarkable. From the hillside thyme fields to the coastal olive groves, each traditional Lebanese ingredient carries a distinct biochemical signature. Understanding the phytochemicals, minerals, and macronutrients in these foods illuminates why the Lebanese dietary pattern has attracted growing scientific interest.

Za'atar: Thymol, Carvacrol and Mineral Density

Lebanese za'atar is a blend of dried Thymus species (primarily Thymus vulgaris and Origanum syriacum), sesame seeds, sumac, and salt. The volatile oil fraction of thyme is dominated by thymol (2-isopropyl-5-methylphenol) and its isomer carvacrol — phenolic monoterpenes with potent antioxidant activity as measured by DPPH radical scavenging assays and ORAC values. Thymol inhibits lipid peroxidation by donating a hydrogen atom to lipid peroxy radicals, interrupting the chain reaction of oxidative damage to membrane phospholipids.

Za'atar is also a meaningful source of iron — dried thyme contains approximately 17–24 mg iron per 100 g dry weight (though bioavailability is limited by the simultaneous presence of plant-based non-haem iron and polyphenols that can chelate iron and reduce its absorption). The sesame in za'atar adds calcium, magnesium, zinc, and lignans (sesamin, sesamolin) — plant polyphenols that act as antioxidants and are metabolised by gut bacteria into the mammalian lignans enterolactone and enterodiol.

Olive Oil and Labneh: The Lebanese Fat and Protein Matrix

Lebanese extra-virgin olive oil is exceptionally rich in oleic acid (C18:1, ω-9), typically comprising 55–80% of total fatty acids. Oleic acid is the substrate for elongation and desaturation to eicosatrienoic acid (Mead acid), a non-essential omega-9 that partially occupies membrane phospholipid positions when omega-3 and omega-6 are insufficient — a biochemical indicator of essential fatty acid status.

Beyond oleic acid, extra-virgin olive oil contains a complex polyphenol fraction including oleocanthal (which inhibits COX-1 and COX-2 in vitro in a manner similar to ibuprofen at culinary doses), oleuropein (the glucoside of hydroxytyrosol, with potent antioxidant activity), and hydroxytyrosol itself — one of the most potent natural antioxidants measured by ORAC, with a distinctive catechol structure enabling two-electron reduction of reactive oxygen species.

Labneh (strained yoghurt) delivers calcium, phosphorus, high-quality whey and casein protein, and — crucially — live lactic acid bacteria including Lactobacillus and Streptococcus thermophilus species. These organisms produce lactic acid during fermentation (reducing the pH to approximately 4.0–4.5), which precipitates caseins and simultaneously creates an environment that supports the survival of beneficial microorganisms into the gut. Lentils, Chickpeas and Pomegranate: Plant Biochemistry of the Meze

Lebanese lentils (Lens culinaris) are an exceptional source of folate (approximately 360 mcg per 200 g cooked, covering close to 90% of the adult RDA), non-haem iron (~6.6 mg/100 g cooked), plant protein with a relatively balanced amino acid profile rich in lysine, and resistant starch — a fermentable prebiotic fiber. Lentils also contain phytic acid, which chelates zinc and iron; traditional preparation methods including soaking and cooking substantially reduce phytate content and improve mineral bioavailability.

Chickpeas provide a complementary amino acid profile to cereal grains, particularly high in lysine, with significant amounts of methionine when combined with sesame-based tahini (as in hummus). They are also a source of choline and B-vitamins including thiamine and pyridoxine.

Pomegranate arils and juice contain punicalagins — ellagitannin polyphenols that are hydrolysed in the gut to ellagic acid and further metabolised by intestinal bacteria to urolithins (urolithin A, B). Urolithins have attracted significant research interest for their effects on mitophagy (selective autophagy of damaged mitochondria) and their interactions with the gut microbiome. Pomegranate also contains anthocyanins (cyanidin-3-glucoside, delphinidin-3-glucoside) responsible for its deep red colour and its ORAC antioxidant activity.

Sumac (ground Rhus coriaria berries) — used to add tartness to salads and grilled meats — contains gallic acid, a phenolic acid with strong radical-scavenging activity, and anthocyanins including delphinidin and cyanidin glycosides. Its characteristic acidity comes from malic and tartaric acid content.
